Coffee: Seed to Cup

We will cover every step of the coffee production chain from planting the seed through to roasting. We’ll cover planting coffee, fertilizing, flowering, and pruning to get coffee from a seed to a tree. Then, we’ll discuss harvesting and processing which will bring the coffee from a cherry to pergamino/parchment. We’ll then learn about dry milling which takes coffee from parchment to a green bean where it is then exported/imported and finished by roasting.  This informative program will touch on all major steps required to get coffee in your cup.

Over the last several years, Byron has worked in almost every link in coffee production. From planting and harvesting coffee on his own farm to competing as a barista he has personally made the seed to cup journey. He is the Coffee Director at Dallis Bros. Tales of Tea and Women: From the Victoria Era to the Modern Age

Tea was introduced to England in the middle of the 17th century. Initially it was rebuffed by many because it came from a foreign land. It was only after Charles the II married Catherine of Braganza, who was an ardent tea drinker, that tea became more popular especially among the elite. It was an exotic and very expensive beverage. By the middle of the 19th century the price of tea was no longer exorbitant and was consumed on a regular basis by men and women of all social status. Tea’s allure had an impact on both the upper and working class through the centuries. Discover how tea has affected women’s social events, wardrobe, business ventures, and health issues from its early introduction into current times

Judith Krall-Russo is a sought after speaker who presents programs on tea and food history throughout New Jersey, New York, and Pennsylvania. As a writer she has contributed to Gastronomica, Tea-A Magazine, and County Women.
 
She is a graduate from The Tea School, Pomfret, Ct. and has completed Tea Certification Levels One, Two, Three, and Four with the Specialty Tea Institute, New York, NY.  Ms. Krall-Russo attended the Third (2002) and Fourth (2007) International Scientific Symposium on Tea and Health in Washington DC; Liquid Culture: Coffee, Chocolate and Tea in Early Modern Europe at Bard Graduate Center, New York, NY and The World Tea Forum in New York City.
 
In 2003, Ms. Krall-Russo began studying Japanese Tea Ceremony at the Urasenke Chanoyu Center in New York City and has attended special workshops in Chinese Gong Fu Tea and the Korean Tea Ceremony. In October 2010 Judith traveled to Asia for an in depth study of the tea culture of Taiwan and Japan.
 
In 2008 Ms. Krall-Russo was the guest curator for “The Elegant Eccentric Teapot”, a national juried exhibition held at the historic landmark, the Barron Arts Center, Woodbridge, New Jersey. She has been interviewed by The Wall Street Journal, New Jersey Countyside, Garden Plate, The Star Ledger and in February 2011 she was a guest on Martha Stewart Sirius Radio. In March of 2012 Judith led a tea tour with colleague Lisa Boalt Richardson, “Taste the World of Tea” for the International Association of Culinary Professionals, in New York City.
 
Some of Ms. Krall-Russo’s programs include: “History of English Tea”; “Tea and Other Meals in Victorian America”; “The Asian Tea Experience”; “Tea Traditions from Many Lands”; “Ireland – Tea, Food and Folklore”; “Drink to Your Health – Coffee or Tea”; “Blueberries – New Jersey’s Wonder Fruit” “Favorite Foods and Libations of Past Presidential Families”; and “Fun and Food Along the Jersey Shore”.   Her programs have been presented at: The Morven Museum, Georgian Court University, The Job Corp Culinary Competition held at Atlantic-Cape Community College, Metlar-Bodine House Museum, Kuzer Mansion, Atlantic Heritage Center, The Barron Arts Center and Williams – Sonoma.
 
Judith is a member of the following organizations: The Culinary Historians of New York, International Association of Culinary Professionals, Slow Foods USA and Historic Foodways Society of Delaware Valley; Specialty Tea Institute, and Mid-Atlantic Tea Business Association. She is also a popular speaker for the Horizons Speakers Bureau of The New Jersey Council for the Humanities.
 
Ms. Krall-Russo holds an MBA from Pace University, BA from Montclair University and AAS from The Fashion Institute of Technology.

British tea taster Kevin Gascoyne has been buying tea in Asia since 1989.  He started his career as a tea writer for publications in the U.K., the U.S.A. and Japan. Over the years his passion for the black teas of India has spread to the plantations of many other countries. 

In Canada, he is one of the owners of the Camellia Sinensis Tea Houses and Tea Schools of Montréal and Québec City. Every year the 4 tea-tasters of this very specialized company travel to the tea gardens of Asia to put together their internationally renowned catalogue. Their teas are sent to “amateurs” and tea stores all over the world. They also co-authored of the prize-winning book ‘Tea, History, Terroirs, Varieties’.

The annual Camellia Sinensis “Dégustation de Printemps” or Spring Tasting has gained great renown over the years.   During this one of a kind event they display all the fancy teas that they bought in Asia during the spring harvest to the public, the media, the tea industry and the tea drinking community. As well as regular public tastings, Kevin is also involved in a wide range of workshops, conferences, seminars, research and consulting activities in North America and Asia.

About Angelo Trapani:

Angelo got his start in beekeeping with his wife, Anna Trapani, by taking a beginner’s class through the New Jersey Beekeepers Association. Today, they both serve as members of the association and Angelo serves as the newsletter editor.  The Trapani’s also both sit on local boards of agriculture in the state of New Jersey.
 
Angelo and Anna maintain 30 hives that each have between 50,000 and 80,000 bees that produce up to 140 pounds of honey each year. Together, these third generation bee keepers produce all natural honey products that are extracted directly from their hives. They sell pure honey and bottle it seasonally.
 
Angelo’s award-winning honey just recently was a first place winner, best of show winner for a single best entry and best exhibitor with the overall highest ribbon total at the 2012 State Honey Show.

Cynthia Gold, Tea Sommelier at L’Espalier in Boston, discovered her true passion for tea after taking enlightening excursions into the tea fields of Asia, where she uncovered the pure beauty of the tea industry. Ms. Gold is one of only a handful to have brought, “Tea Cuisine,” to the United States where she has been actively combining teas with food via pairings or within the same dish for the last fifteen years. About Kirsten Kristensen:

Owner, Tea 4 U, LLC

Kirsten Kristensen, Tea Coach and Educational Tea Specialist, gives various programs on tea throughout New Jersey.  The subjects include history of tea, health benefits of tea, tea traditions and cultures, tastings of teas from around the world, and tea events for children and adults. Ms. Kristensen is certified by the Specialty Tea Institute of Tea USA, Level 1, 2, 3 and 4 and has spent several years living in China and Denmark. She has an Associate Degree from Brookdale Community College in Lincroft, NJ, and a B.A. in Psychology from Thomas Edison, NJ with specialty in health and science of nutrition.

She has had several articles on tea and health published and is a free-lance writer to the professional tea publications. She is the owner and editor of the publication, "The World of Tea". The first 60-page issue was published in 2010 with the subtitle "Focus on
Taiwan". The second is in the process, titled "Focus on Sri Lanka".  

While Ms. Kristensen served as 1st Vice President on the board of the Brookdale Community College Alumni Association she was also the Service Project Coordinator of the two-year College Project in conjunction with the honor society Alpha Pi Theta, "Knowledge is Power - Three Cups of Tea" with the purpose to promote awareness of the situation in the Karakoram region and to raise $35,000 to Humanitarian Greg Mortenson of Central Asia Institute to build a school in the name of Brookdale Community. The project was successfully completed in 2008 resulting in the construction of the Brig Agha School in Qurmara, Northern Pakistan.

Ms. Kristensen graduated with honors from Brookdale in 2005 and with the Outstanding Student Award in Social Science. She was President of the Honor society Alpha Pi Theta of Phi Theta Kappa, the international honor society for two-year colleges from 2002-2003, and is a co-founder of Brookdale's chapter of Psi Beta, international honor society for psychology. She was bestowed with the International Distinguished President Award and has received several other distinguished awards.

She is a published author of "When Penelope travels along" (published in Denmark in 1998, Når Penelope rejser med), a book about expatriation and cultural adjustment and assimilation. She has a 20-year background in human resource as an Executive Assistant, Personnel Manager, Human Resource Development Manager, and professional Business Coach. As a Danish citizen she was born and lived in Denmark until 1998 when the family settled in the U.S, except for 3 years expatriation in Hong Kong form 1991-1994. She is married on her 23rd year to Per, and together they have two daughters, Maj Kristina (22) and Lin Pernille (20) who both assist in Ms Kristensen's tea business.   

As a networker Ms. Kristensen is an active member of her local Shore Women's Business Network.

Ms. Kristensen owns the business Tea 4 U, LLC located at The White House in Oakhurst on 45 Monmouth Road in Oakhurst, NJ 07755. The house is dedicated to a tea house, tea salon, and educational meeting facilities for tea programs. The teashop carries a selection of quality loose teas with a specialization in high quality flavored and organic teas as well as a variety of tea accessories from around the world.
